Garlic Ginger Chicken Salad
Our Garlic Ginger Chicken Salad will be the hit of any gathering! When topped with crunchy Lo Mein noodles and chopped green onions, this recipe has color, texture and incredible taste! Worth the effort.
- 6 Cloves Garlic, minced
- 4 Tablespoons Grated Fresh Ginger
- 1 Tablespoon Hot Chili Paste
- 1 Cup Rice Vinegar
- 1 Cup Brown Sugar
- 1 Pound Chicken Breast, cooked & cubed
- 1 Bunch Green Onions, chopped
- ½ Cup Mayonnaise
- Lo Mein Noodles
Directions
Whisk garlic, ginger, chili paste, vinegar, and brown sugar in a saucepan. Boil over medium heat with constant stirring. Cool completely after removing from heat, then strain while retaining solids. Mince residual garlic/ginger and divide cooled dressing into two equal portions. Add minced solids to each bowl, then whisk mayonnaise into one portion. Toss chicken with the mayo-based dressing in a large bowl. Serve remaining dressing separately. Garnish with lo mein noodles or sesame seeds.
